COFFEE

Are your coffees organic?

All our coffee offerings are certified organic. From our single-origins and decaf to our espressos and blends we only carry certified organic coffee.

How many ounces/grams of coffee are in your bags?

Each bag contains 12 ounces (340 grams) of coffee. As for our Cascara, each bag contains 90 grams of tea.

Where do you roast your coffee?

Our facilities are in Los Angeles and we roast to order.

Do you have Decaf?

Yes! Our Mexico Oaxaca Decaf and Brazil, Carmo De Minas Decaf works well in both espresso and various filter preparations. See our different brew guides that will help you get the most from our decaf coffee.

What is the difference between single-origin coffee and blends?
Single-origin coffees are sourced from a specific farm that can be family-owned farms, estates, or communities served by different organizations.

Blends are coffees from different places that we put together carefully and thoughtfully so they can produce its unique flavor and showcase its specialty qualities we find in coffee.

Are your coffees Fair Trade Certified?

We proudly place great emphasis on sustainability and quality both from an economic and environmental perspective. We purchase our coffee from Direct Trade and Fair-Trade certified cooperatives. It is our intention not only to maintain this effort but to also spread this across other local coffee farms.

We are committed to direct trade and fair-trade making sure we maintain our transparency and relations with farmers by directly working with them.

How should I store my coffee(s)?

We recommend using coffee within 20 days after it is roasted (roast dates are printed on every purchased bag). We recommend storing coffee in a cool and dry place. We recommend our coffee to be in either an airtight container or in its original packaging.

Placing coffee somewhere there is moisture and heat will cause a loss in flavor. We do not recommend storing beans in the refrigerator and can only recommend storage in the freezer under specific cases mainly related to long-term, uninterrupted periods.

How do I brew coffee at home?

We have brew guides for the following methods that can help you get the most out of coffee:

Pour Over | Chemex | Kalita
Cold Brew
Espresso
AeroPress
French Press
Automatic Drip Machine

What coffee grinder should I use?

We recommend a conical burr grinder. As most specialty coffee companies use this specific grinder it produces a more balanced and even extraction of the coffee during its brew.

Lastly, we recommend you grind your coffee fresh before brewing if the option is available.

What are coffee cupping sessions?

Cupping is a lab experiment of evaluating the coffees we receive from around the world. Any component changed during the roasting process will alter the profile of the coffee. Which makes cupping so important! Without cupping, we would not really know what we are selling.

The goal is to study the tastes, aromas, and profile of brewed coffee in a methodical way. It is a practice done by most coffee companies. It can be done informally by anyone. All you need are a few freshly roasted coffees, cupping spoons, glassware, paper and a pen (or a phone/tablet) to write down notes, and an open mind.
